Bulgur yoghurt and mint soup

Tanomeno shourva –
Bulgur (Cracked wheat) with yogurt & mint
Ingredients
2 cups bulgur
10 cups water
100gm butter
1 cup yogurt (strained)
1 tblspn dried mint
Method
Place bulgur in sift and rinse it under running water.
Boil water in a large pot then add bulgur and salt to taste.
Bring to boil for approximately 10-15min.
Pour yogurt into a bowl then slowly add one cup of boiling water to yogurt while mixing
continuously to prevent curdling, keep adding water to heat yogurt.
Add yogurt to bulgur and gently mix through.
Melt butter in a small pot then add mint and mix together.
Pour melted butter into soup pot and mix through.
Ready to serve
