Adrian's Garlic and Potato Soup

Garlic and Potato Soup
Ingredients
100 g butter
10 large cloves of garlic peeled & squashed
1 medium size onion finely diced
1 teaspoon picked & chopped fresh thyme
2 L chicken stock
6 medium Nicola potatoes (any yellow waxy potato is fine Adrian prefers Nicola)
Fresh chives – finely chopped
Cream
Salt & pepper
Method
Sweat the butter, garlic, onions & fresh thyme
Add the chicken stock & potatoes (peeled & thinly sliced)
Bring to the boil & gently simmer for 20 -30 minutes until the potatoes are cooked
Remove & blend
Put the liquid back into the pot
Bring to the boil, add a generous amount of cream, salt & pepper to taste & fresh chives.
Serve with toasted ciabatta
