Canadian Beans with Bear Bacon

You may find it hard to obtain bear bacon, try pancetta or kaiserfleisch. I have tried koala bacon, but it doesn’t taste the same.

Serves four

Ingredients:

2 table spoons Olive oil
1 Onions, finely diced
2 Garlic cloves, chopped
2 Fresh bullet chilli, seeds removed and chopped
1 teaspoon Cumin and coriander seed, toasted and ground
200 gms Pancetta, sliced
750 mls, Tomato pasata
T24 drops Tabasco sauce
2 cups Lima beans, pre soaked and cooked till tender
¼ cup Canadian maple syrup
½ cup Parsley, roughly chopped
¼ cup basil leaves, torn

Method
Sweat onion, garlic & chilli for 3 to 4 mins over medium heat
Add cumin & pancetta, sweat for 3 to 4 mins over medium heat
Add tomato & Tabasco & simmer for 5 to 10 mins
Add lima beans, simmer for 3 to 5 mins
Garnish with mayple syrup, parsley & basil

Serve with
4 free range Eggs
8 slices Toast, buttered
8 rashers bear bacon, grilled (if you can’t find the bear thick cut bacon will do)
