Bob Hart's Rad Croquetta
There are two things we should all recognise about great recipes: they are usually simple, and they come from unexpected places.
Take, for example, a recipe I have just been given for a delicious Spanish snack called croquetta - little, bullet-shaped, golden, crumbed croquettes, except that they contain no potato.
The recipe is from a friend's Spanish mother-in-law who scribbled it on a post-it note for me. I tried a few of hers, then I made them according to this recipe and ... amazing. Try this:
Chop 3 onions (4 if they are small - I used red ones which I prefer) and sweat them, in a large pot, in a splash of oil. When they are soft, add 4 heaped TBS of plain flour and stir it into the onions, over the heat, to cook it for a few minutes. Then add up to 1 litre of full-cream milk, slowly, stirring until no lumps remain. Drop in a bayleaf and add a few grinds of nutmeg. And now, the fun part.
Add several handfuls of any leftover cooked meat you like. I had some pork and some ham, which I chopped, and most of a chicken thigh. Stir it into the mixture until you can see that there is enough going on. Almost anything works, incidentally - beef, veal, lamb neck, fish - anything lurking in the fridge. Add salt and pepper to taste.
Cook this mixture gently, stirring often, until it becomes a cooked dough. Then, remove it to a bowl and refrigerate overnight.
To make the croquetta, make bullet-shapes of the dough with two dessert spoons (easy if you have watched a chef do it!). Then dip them in an egg-wash and crumb them - I used Japanese Panko breadcrumbs.
To serve, simply shallow-fry them in about 1cm of very hot peanut oil for a couple of minutes a side, until they are crisp and golden. Drain on kitchen paper, and eat with chilled, dry sherry. Sensational!
