Bob Hart's Red Roast Duck Curry
Delicious Asian dishes need not be complicated. And I can think of few better examples than this simple, delectable curry which can be whipped up very quickly indeed.
Buy a Chinese roasted duck from your nearest Asian barbecue shop. Slice down both sides of the breast bone, remove the two breasts and cut into thick slices. Take off the drumsticks and leave them whole, but debone the thighs and slice. Remove the wings, discard the first two joints and leave the meaty shoulder bones whole,
In a largish pot, heat 4tsp Thai red curry paste until it becomes fragrant. Add 2 cups coconut cream, a generous pinch of sweet paprika, 1tsp tomato paste, 2tsp fish sauce and 1 1/2 cups of water. Simmer, stirring, for about 6 minutes, or until thick and rich. Add the duck to the sauce to warm and finally add 3/4 cup fresh or canned lychees and the leaves from a small bunch of fresh basil, shredded. Heat through and serve with jasmine rice.
