Bob Hart's Spicy Roquefort Mayo

Mayo

1. Stir 1/4 cup of Best Foods mayo into 1/2 cup of crumbled Roquefort cheese, or a similar, full-flavoured blue cheese (Stilton is OK, as is St Agur).

2. Add 1tsp chopped, fresh thyme and half a dozen good shakes of Tabasco.

3. Combine well, and brush it onto your warmed (on the grill) hamburger buns - I suggest you use the brilliant ciabatta rolls made by Dench Bakeries in Fitzroy, incidentally - before adding a little nest of fresh, washed rocket, your hamburger patty and slices of salad onion.

4. YUM!
