Bob's ice cream pudding

Most keen home cooks have at least one Iain Hewitson recipe in their repertoire, and most have many more than that.

But this one - a gloriously simple Christmas ice-cream pudding - is an absolute ripper. It is so good that it should be declared a national treasure, and should replace English plum pudding at Christmas time.

Because much as I love English plum pudding, it is designed to be eaten in mid-winter, not at our Christmas time. And the eating of it at our Christmas time is surely, therefore, un-Australian.

I have made one tiny refinement to Iain's brilliant recipe: I use one cup of sultanas and one of mixed, dried fruits rather than two of the latter. And I soak those sultanas - overnight if possible - in brandy. But please, don't tell him, OK?

So, add the two cups of dried fruit (follow my decadent lead if you like) along with 100g of chopped, glace pineapple. 100g chopped glace cherries, 50g chopped glace ginger, the finely grated zest of two oranges. 3/4 cup of chocolate bits, 2tbs brandy and 2tbs Grand marnier to 4 litres of softened, commercial vanilla ice-cream/ Mix it together well.

Line a very large bowl with cling wrap, spoon in the mixture, cover with more wrap and place in the freezer overnight.

To serve, remove the top piece of wrap, invert over a serving plate and wrap a hot towel around the bowl to help the pudding release.

Serve the pudding with berries which have been tossed in Grand Marnier and dusted with icing sugar.

  • Christmas plum pudding eaten in Summer is a tradition and won't change with a lot of people. Why do we have to change? We can have both and let people make up their own minds. I love making and eating my Christmas plum pudding and wouldn't trade it for anything.
