Roasted and spiced almonds

Almonds

- Make a spice mix from 40g salt, 1tsp smoked paprika, 1tsp sweet paprika, 1tsp ground, dried chilli and 1tsp sugar. Place half of this in a mortar and grind to a fine powder, and they return it to the rest of the mix.

- Place 200g fresh, organic almonds in a bowl and toss with 1 tbs EV olive oil. Spread them on a baking tray and bake, at 180C, for 4 minutes, tossing a few times so that they roast evenly.

- Tip the almonds into a clean bowl and season with 1 1/2 tsp of the spice mix. Taste them, and add more spice mix as required. The rest of the spice mix will keep well in a sealed container for later use.
