Sweet potato mash with maple syrup
Thanksgiving, the warmest and best loved of all American holidays is, apart from anything else, a great chance to rehearse for Christmas.
Americans get to cook their turkey a month before Christmas. And usually, they get it right. But if something goes wrong, they will have it sorted by the time Christmas arrives.
My brining recipe is on the website, and I strongly suggest you follow that for the perfect turkey. But also, remember to use a meat thermometer to check to see when it is done. Look for a temp of around 77 C, remembering that when you take it out of the oven and rest it under loosely tented foil, it will keep cooking.
But in addition to the turkey, why not try a classic American side dish? It is sweeter than we are used to, certainly, but absolutely delicious with a slab of turkey. It's sweet potato mashed with maple syrup.
To make it, roast 1kg of sweet potatoes - the orange fleshed ones - until they are soft. Cool them enough to split them and scoop out the flesh. Add 4tbs unsalted butter and 1/4 cup pure maple syrup. Mash, and season with sea salt and freshly ground pepper. Serve a big dollop beside the turkey. Magnificent!

G'day Lexie, That doesn't sound like me - I have never made a cup cake in my life. I have eaten a few, however, although I prefer to call them fairy cakes, which they were when I was a kid, and before the word police went to work on them, along with fairy penguins.
