Bob Hart's Candied Sweet Potatoes

CANDIED SWEET POTATOES

This classic Thanksgiving side dish is very sweet, but quite wonderful. It would be just as good with the Christmas turkey.

Give it a try:

Peel a bit over 1kg of sweet potatoes (kumara - the orange ones), slice into discs a bit more than 1cm thick and steam, in a steamer set in a large pot of water, for 10-15 mins, or until a knife point just penetrates. Put them to one side to cool. Make a syrup of ¾ cup brown sugar, 2tbs water, 3tbs unsalted butter and a good pinch of sea salt. Bring this mixture to a boil and simmer for about 5 minutes.

Place the sweet potato discs in a shallow baking dish that will take them in one layer, overlapped slightly. Round dishes work best, but square are also OK. Drizle the warm syrup over the potatoes and bake them, in a 180 C oven, for 90 mins, basting regularly with the syrup. (Take the baking dish from the oven, tilt it and scoop up the syrup with a spoon, pouring it over the top of the sweet potatoes. This will help to caramelise the edges).
