Bob Hart's Christmas Traditions
Come Christmas, we should all try, each year, to add a new tradition to our celebrations.
I see nothing wrong with pinching the best of other nations’ traditions. Like American egg nog, for example. Everybody in the US seems to drink gallons of the stuff at this time of the year, and who can blame them? Real egg nogs are fiercely alcoholic, and not something to drink if you are driving anywhere. But some are made with less booze, for reasons of personal safety. You decide.
Mine, I’m afraid, is rich and ferocious. It is also life-altering, so give it a try: Beat 12 egg yolks in a large bowl until pale. Beat in 1 1/2 cups caster sugar until thick and pale. Beat in four cups of full milk and four cups of pouring cream, then stir in two cups of bourbon (no, not Scotch) and one of (Caribbean) brown rum.
To serve, beat the whites of those 12 eggs with a pinch of salt until frothy, add a pinch of cream of tartar and continue beating until they hold soft peaks. Fold into the yolk mixture. Then whip two cups of cream and fold into the mixture.
Gently even out the texture with a balloon whisk. Sprinkle with freshly grated nutmeg and serve. Sparingly. Or, if you insist, extravagantly. Merry Christmas.
