Bob Hart's Belgian Waffles
1 sachet dried yeast
2 cups lukewarm milk
4 eggs, separated
1 tsp vanilla extract
2.5 cups sifted plain flour
1/2 tsp salt
1 tbs caster sugar
1/2 cup melted, unsalted butter
Pour warmed milk into a large bowl and sprinkle yeast over. Stir. Beat yolks, add vanilla, and then add both to milk and yeast.
Sift flour, salt and sugar, and then add to liquid. Whisk until smooth, but don�t worry about small lumps. Stir in melted butter, and let this mixture stand for about 45 min. It will double in size.
Ladle into waffle-maker as required, being sure to work into corners. Cook as per waffle-maker instructions, but usually a little over 4 mins. Eat, buttered, with maple syrup and crisp bacon.
