Dining with Den – almond & coriander chicken with lemon mayo
Almond & Coriander Chicken with Lemon Mayonnaise
Pre 15 mins. Cook time 10 to 15 mins.
1 ½ cups of almond meal
2 teaspoons of chilli flakes
½ cup of fresh , rinsed coriander
1 tbsp. finely grated lemon rind
4 x 200g chicken fillets
1/3 cup of plain flour
Vegetable oil for shallow frying
2/3 cup of mayonnaise
1 teaspoon finely grated lemon rind
¼ cup of lemon juice
- Pre heat over to 200 C fan forced
- Make lemon mayonnaise
- Combine almond meal, chilli, coriander and rind in a shallow bowl. Whisk eggs in another shallow bowl. Coat chicken in flour, shake off escess. Dip chicken in egg then coat with the meal mixture.
- Heat oil in large frying pan – cook chicken in batches until browned. Place chicken on oven tray then ake uncovered for around 10 mins.. Slice chicken into thick pieces and serve with mayonnaise. To make mayonnaise simply combine ingredients.
