Dining with Den – Chicken Katsu
CHICKEN KATSU
Ingredients
3 chicken breasts
Sea salt
1 cup plain flour
2 eggs
2 cups of Panko breadcrumbs
Vegetable oil
Steamed rice
Japanese Curry Sauce
2 tbsp vegetable oil
1 small onion, finely diced
2 garlic cloves, finely chopped
1 tbsp plain flour
1 tbsp curry powder (mild)
1 tsp garam masala
2 tsp rice vinegar
2 cups of chicken stock
A quarter cup of apple juice
1 tbsp finely grated ginger
1 carrot halved lengthways then sliced
2 tbsp cornflour (with 2 tbsp water)
2 tsp of sea salt
Method
Make curry sauce – heat oil at medium temp. Add onion and cook until translucent (10 mins).
Add garlic for 1 minute. Add flour and stir for 1 minute. Add curry powder, garam masala, vinegar, chicken stock, apple juice and ginger.
Combine well and simmer for 10 mins. Add carrot and and cook for another 10 mins.
Once carrot is tender stir through cornflour mixture. Cook until thickened then season with salt and pepper. Keep warm.
Slice chicken breasts lengthways…cover with baking paper and pound each piece to a thinner uniform thickness.
Season with salt before next step. Place eggs, flour and breadcrumbs in bowls. Coat chicken in flour then egg then breadcrumbs.
Heat 2 cms of vege oil in pan on medium heat. Cook chicken for around 4 minutes each side or until golden. Season with salt while warm.
To serve, steam some rice, slice chicken evenly and place on rice then pour over the sauce.
