Donna Hay’s complete breakfast pancakes
Ingredients
1 cup buckwheat flour
1 cup almond meal
2 tbs hemp seeds
2 tbs flaxseed meal
1 tsp cinnamon
2 1/2 tsp baking powder
1/2 cup coconut sugar
1 cup of mashed banana
1/4 cup extra virgin olive oil
1 1/4 cups of milk
yoghurt to serve
fresh fruit to serve
Method
Heat a large non stick fry pan on medium then brush pan with oil and cook half cupfuls
of mixture for 3 to 4 mins. or until puffed and golden. Remove and keep warm.
Serve with yoghurt and fresh fruit – makes 8
