Dining with Den – Mango Macadamia Slice
1 & 1/2 cups plain flour
3/4 cup self raising flour
1 cup macadamias toasted ( plus 1/2 cup extra)
140g butter chilled and chopped
3/4 cup castor sugar
2 x 300g cartons sour cream
2 tbsp brown sugar
2 small mangoes peeled and thinly sliced
Toasted flaked coconut, icing sugar to serve
Preheat oven to 180C
Line a 20 x 30 slice pan with baking paper
Place flours, macadamia, butter, castor sugar and egg in food processor. Pulse until a dough forms. Finely chop extra macadamia and knead through the dough.
Using floured fingertips, press dough into pan. Bake for 20 mins until golden. Cool for 10 mins.
Meanwhile is a bowl combine sour cream and brown sugar with a whisk until smooth. Spread evenly over base then arrange mango slices over the cream. Bake 15 to 20 mins. until topping is firm.
Cool completely in pan. Serve in slices with flaked coconuts and dusted with icing sugar.
