Prosciutto and Pea ( Pasta Bake )

Ingredients –

375g of curly pasta

1 tsp cornstarch

300ml pouring cream

20g butter

12 slices of prosciutto chopped coarsely

3/4 cup frozen peas

1 cup finely grated Parmesan ( Grana Padano )

Method –

Cooked pasta in a large saucepan of boiling salted water until tender, drain and return to pan

Blend cornflour and a little of the cream until smooth…..then pour in remaining cream

Melt butter in a large frying pan on a medium heat – cook prosciutto for three minutes stirring as it cooks until lightly browned.

Add cream mixture, peas and half the cheese, stirring until sauce boils and thickens slightly.

Pour sauce over hot pasta and toss to combine. Season to taste

Heat grill to high

Spoon pasta mixture into an oiled 2 litre ( 8 cup ) ovenproof dish and sprinkle with remaining cheese.

Place under grill for around 8 minutes or until the top has browned slightly

Extra Note – if you want more greens you could add finely chopped broccoli or cauliflower florets when you add the peas.
