Sausage Rolls from Cookery The Australian Way

Oven temperature  – 220c 

Cooking time – 20-25 minutes 

Number – 20 small, 12 large 

Cooking utensil – 4-sided oven tray 

Ingredients –

1 quantity flaky or rough puff pastry

500g sausage meat

1 teaspoon chopped parsley

Half a teaspoon of salt

3 shakes of pepper

4 tablespoons of flour

Parsley sprigs

Method – 

Set oven at 220c

Mix sausage meat, chopped parsley, salt and pepper

Roll out pastry into an oblong 30cm by 20cm for large rolls, or 40cm by 18cm for small rolls

Cut pastry in two length wise

Sprinkle board with flour and roll sausage meat into two rolls, the same length as the pastry

Place sausage meat on top of pastry and moisten edges of pastry with water.

Fold the pastry over the meat, having the cut edge on the side.

Trim the cut edges

Cut into suitable sizes and place on oven try. Mark with a knife.

Glaze with milk and bake 220c for 10 minutes, then at 190c for further 10-15 minutes

Lift on to hot serving plate, garnish with parsley sprigs and serve
