Sebby’s Scrolls

367 North Rd

Caulfield South

Jimmy Bartel has been telling me I have to try these freshly made scrolls in Caulfield for a while now. He gave me the early tip off months back, before I started seeing it pop up everywhere online – don’t know if that’s the algorithm listening or their popularity rising. I won’t say I’m a huge scroll fan specifically, it’s never been a mode of transport for my food that’s stood out to me but I can tell you now, they proved me wrong. I want all my meals in scroll form now – more specifically in Sebby Scroll form.

You can smell Sebby’s Scrolls before you see it. The sugary warmth of cinnamon and freshly baked dough hits you from halfway down North Road, and suddenly you’re walking faster, with purpose. This tiny Caulfield shopfront is takeaway-only, but don’t let that fool you—there’s a whole world of sticky, swirled joy packed behind that counter.

Sebby, the scroll wizard himself, started baking in the quiet stillness of Melbourne’s lockdowns. With cafés shuttered and sourdough fatigue peaking, Sebby found his sweet spot – literally. He began selling scrolls out of his house, and what started as a side hustle is now a daily scroll pilgrimage for locals and carb enthusiasts across the city.

Inside, the vibe is cheerful chaos. There’s no seating, no frills – just a glass cabinet stacked with golden, glossy spirals and a steady flow of regulars who know exactly what time to arrive before their favourite sells out. Behind the counter, staff call out names like they’re announcing lucky lottery winners. Spoiler: everyone wins.

Their classic cinnamon scroll is a buttery, soft cloud coiled around brown sugar and cinnamon, with a base so caramelised it practically toffees in your mouth. It’s topped with a hedonistically thick cream cheese frosting – tangy, rich, and unapologetically generous. You’re going to get it on your fingers and you’re going to be okay with that.

If you’re not a sweet tooth, don’t panic. The Vegemite and cheese scroll surprised me: nostalgic, salty, and somehow as comforting as your favourite primary school teacher. It somehow oozed vegemite but not in a way that would turn off international visitors. There’s even a vegan option that doesn’t feel like a compromise – same pillowy dough, same luscious icing, no dairy in sight.

The other savoury option I tried was their pizza scroll. This scroll combines the rich flavors of tomato sauce, melted cheese, and herbs, all rolled into their signature soft dough.

This month, Sebby’s has introduced a Biscoff special: a scroll infused with the spiced caramel flavour of Biscoff spread, topped with a generous swirl of Biscoff cream cheese icing and a sprinkle of crushed Biscoff cookies. It’s limited-time that has people lining up to try it, I won’t mention the bueno one you could get last month.

That’s it! That’s the whole menu. Short but satisfying. You can grab an Allpress coffee while you’re there (it’s good), or walk your scroll over to the nearby park and eat it in the sun with sticky fingers and zero regrets. There’s no ceremony here, no curated Instagram moments, just really good food that does exactly what it promises.

They open at 8:30am Wednesday through Sunday, and when they sell out, that’s it for the day. A word of advice? Set an alarm.
