Flip Shelton’s recipe for summer apple pie with cashew cream

Recipe for summer apple pie


2 apples, peeled and roughly chopped

2 cups walnuts

1 cup currants

1/2 cup shredded coconut

1 teaspoon cinnamon

1 teaspoon vanilla extract


1. Place all ingredients in a blender and process until combined and just a little chunky (you can blend to a smooth paste for kids.)

2. Add 1 tablespoon honey or maple syrup if you have a sweet tooth.

3. Press mixture into individual ramekins.

4. Top with cashew cream.  Sprinkle orange or lemon zest on top with a few mint leaves.

Recipe for cashew cream 


3 cups cashews (if you can soak them for a few hours or overnight, they are super creamy, but don’t worry if you think of this at the last minute)

1 cup coconut water (freshly squeezed orange juice is also excellent or water is OK)

A pinch of cinnamon

Teaspoon of vanilla extract

Orange zest ? optional

1 tablespoon honey or maple syrup – optional


Place all ingredients in a blender and process until thick and smooth. If you want a thinner consistency, add more liquid.

Note: This cashew cream is also fabulous on baked bananas, fresh berries, stewed fruit or dessert pizza.
