The Melbourne Food and Wine Festival will pay tribute to the classic fried potato on it’s opening night later this month.

Maximum Chips will highlight the wonder of fried spuds in all their forms on March 25.

Award-winning author and chef, Amy Riolo, described the spud as one of “great wonders of the world”.

“Everywhere from Peru, where they originated, Latin America, across the Mediterranean, there’s so many great recipes for potatoes around now-a-days.”

Ms Rioli, who is of Italian descent, also disputed Ross’ claim that Italian’s “don’t do potatoes particularly brilliantly”.

“That’s not true!” she said.

“It’s just because sometimes abroad we don’t do potatoes, or in restaurants we might not do potatoes brilliantly.

“But gnocchi … are these wonderful puffy pillows of potato goodness, so I think that’s one of (greatest) expressions of what you can do with potatoes.”
