Ingredients:

  • 8 lamb chops
  • 3 tbsp olive oil
  • 2 sprigs fresh rosemary, finely chopped
  • Zest of 1 lemon
  • 1 tbsp sumac
  • 1 red chili, finely diced
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste
  • Lemon wedges, for serving

Method:

  1. Prepare the Marinade:
    In a large mixing bowl, combine olive oil, chopped rosemary, lemon zest, sumac, diced chili, minced garlic, salt, and pepper. Stir well to create a fragrant marinade.
  2. Marinate the Lamb Chops:
    Add the lamb chops to the bowl and rub the marinade all over, ensuring each chop is evenly coated. Cover the bowl with cling wrap or transfer the chops to a resealable bag. Let them marinate for at least 30 minutes, or up to 4 hours in the fridge for deeper flavour.
  3. Preheat the Grill:
    Heat your BBQ or grill to medium-high. Ensure the grates are clean and lightly oiled to prevent sticking.
  4. Grill the Lamb Chops:
    Place the lamb chops on the grill and cook for 3-4 minutes per side for medium-rare, or adjust the time based on your preferred doneness. Use tongs to flip the chops—avoid piercing them to retain the juices.
  5. Rest the Chops:
    Once cooked, remove the lamb chops from the grill and let them rest for 5 minutes. This allows the juices to redistribute, ensuring tender meat.
  6. Serve:
    Plate the lamb chops and serve with a generous squeeze of fresh lemon juice over the top. Garnish with additional rosemary or chili if desired. Pair with a side salad, grilled veggies, or crusty bread for a complete meal.
