Grilled T-Bone Steak

Grill up a perfect T-bone steak with this simple recipe! A quick sear, fresh herbs, and a touch of garlic bring out incredible flavour. Finish with compound butter and a side of veggies or potatoes for a steakhouse-quality BBQ right at home!

Ingredients:

  • 2 large T-bone steaks, about 4 cm thick
  • 30 ml olive oil or vegetable oil
  • Coarse salt and freshly ground black pepper, to taste
  • 2–3 sprigs of fresh rosemary or thyme
  • 4 garlic cloves, smashed

Optional Ingredients for Serving:

  • Compound butter (e.g., garlic-herb butter)
  • Fresh herbs for garnish (like rosemary or parsley)
  • Lemon wedges (for an extra zing)

Instructions:

  1. Prepare the Steaks
  • About 30 minutes before grilling, take the steaks out of the refrigerator. Letting them come to room temperature helps them cook more evenly.
  • Pat the steaks dry with paper towels, then rub both sides with olive oil.
  • Season generously with salt and black pepper on both sides. Optionally, add a bit of garlic powder or onion powder for extra flavour.
  1. Preheat the Grill
  • Preheat your grill to high heat (230°C to 260°C) for direct grilling.
  • Make sure the grates are clean.
  1. Sear the Steaks
  • Place the steaks on the grill over direct heat. Grill the first side for 4-5 minutes until a golden-brown crust forms, then rotate 45 degrees for nice grill marks and cook for another 2-3 minutes.
  • Flip the steaks over and repeat on the other side.
  1. Check the Temperature
  • Use a meat thermometer to check the internal temperature. Aim for:
    • 52°C for rare
    • 57°C for medium-rare
    • 63°C for medium
  • If the steak needs more time, move it to a cooler part of the grill or lower the heat to let it finish cooking without burning the exterior.
  1. Rest the Steaks
  • Transfer the steaks to a cutting board and place a small piece of compound butter on top (optional).
  • Cover loosely with foil and let them rest for 5-10 minutes. This helps the juices redistribute, keeping the steak juicy.
  1. Serve
  • Slice carefully along the bone and serve with a sprinkle of fresh herbs and a lemon wedge for brightness.

Tips:

  • Avoid flipping the steaks too often; aim for a single flip to achieve the best crust.
  • Letting the steaks rest after cooking is key to maintaining juiciness.
  • Serve immediately, ideally with grilled vegetables or a classic potato side.
