Lachie Strachan’s recipe for hot honey ranch chicken skewers

Savour the perfect blend of savoury and sweet with our Hot Honey Ranch Chicken Skewers! These juicy skewers are grilled to perfection on the BBQ. Enjoy the irresistible combination of flavours in every bite! Better yet the hot honey ranch can be drizzled over pizzas, wings etc or can use it as a dipping sauce.

Ingredients

Makes x2 Long Skewers:

  • X2 Skinless chicken breast fillets
  • Olive oil
  • BBQ rub of choice
  • Hot Honey Ranch:
  • 1 Cup avocado oil
  • ½ Cup crushed red chilli flakes
  • 1 Tbsp sesame seeds
  • 2 Cloves garlic minced
  • 2 Tsp salt
  • 30g Ranch seasoning
  • 150g Greek yoghurt
  • 2 Tbsp fresh dill chopped
  • 1/3 Cup honey

Instructions

  1. To prepare the hot honey ranch in a heatproof bowl add the crushed red chilli flakes, sesame seeds, garlic and salt.
  2. Heat the avocado oil to 120c in a separate saucepan, once temp has reached pour oil into the other ingredients and whisk together. Once it has cooled add in the Greek yoghurt, ranch seasoning, honey and dill. Mix thoroughly.
  3. Prepare chicken skewers by cutting up breast fillets into 3cm cubes and threading them onto the skewers. Use metal skewers to avoid burning on the grill.
  4. Preheat BBQ to direct medium high heat around 250c. Coat the skewers with olive oil and coat with BBQ rub of choice.
  5. Place skewers onto the cooking grill and cooking with the lid closed for around 5 minutes per side. In the last 2 minutes of cooking time baste with the hot honey ranch and continue to cook with the lid closed. The drippings from the hot honey ranch will smoke and add a depth of flavour to then skewers.
  6. Remove from BBQ let rest for 3-4 minutes and serve with your choice of sides.
