3AW listener Merle’s boiled carrot cake recipe!
3AW listener Merle called in to tell Emma Dean and Denis about her extra special carrot cake recipe.
She read it out with such passion, we just had to post it on our website.
So, here goes!
- 1 cup of grated carrot
- 3/4 cup of currants
- 3/4 cup of water
- 3/4 cup of caster sugar
- 50g butter
- 1/2 tsp nutmeg
- 1/2 tsp ground cinnamon
- 1 and 1/2 cup of self-raising flour
- 1/2 tsp bicarb soda
- 1/2 cup of chopped walnuts
Cream cheese frosting:
- 60g cream cheese
- 30g butter
- 1 tbs lemon rind
- 1 and 1/2 cup of icing sugar
Combine the carrot, currants, water, sugar and butter with cinnamon and nutmeg into a saucepan.
Bring it to the boil, simmer for 10 minutes. Leave mixture to cool.
Add the self-raising flour, bicarb soda and walnuts. Mix well.
Place it into a 17cm deep round cake tin, lined with baking paper.
Set to the oven to 180ºC, bake moderately for one hour.
Once baked, leave to cool.
Beat the cream cheese, butter, lemon rind and icing sugar together.
Spread over the top of the cake base.
Merle’s tip: Sprinkle a few crushed walnuts over the top!
