Hot Cross Bun Pudding
This is a great way to use up slightly stale hot cross buns. This pudding is so delicious, all the flavor of hot cross buns and a lovely citrus hit with the marmalade!

Ingredients
4 hot cross buns
60g butter (you can freestyle here)
180g orange marmalade (you can freestyle here)
2 eggs
75g sugar
500ml milk
1/4 tsp ground nutmeg
thickened cream to serve

Method
Preheat the oven to 180C.
Grease a 6 cup baking dish with lots of butter.
Slice the buns as you would to toast, except cut them into three slices horizontally.
Spread one side with butter and thick lashings of marmalade.
Lay the buns in the dish, roughly overlapping and leaving lots of nice gaps for the custard mixture to settle in.
Beat the eggs, sugar, milk and nutmeg together.
Pour the egg mixture over the buttered buns.
Place in the preheated oven and bake for 30-35 minutes or until the custard is just set.
Let sit for 5 minutes so that you don’t burn your mouth!!
Serve with lots of cream!

If you have more buns, don’t forget to increase the custard mixture too!
