Ingredients:

For the Steak:

  • 1kg flank steak
  • 2 tbsp Lane’s BBQ Fiesta Rub – Available from Heat & Grill
  • 3 tbsp olive oil
  • 2 tbsp lime juice
  • 3 cloves garlic, minced
  • 1 tbsp Worcestershire sauce

For the Grilled Corn:

  • 2 ears of corn, husked
  • 1 tbsp butter, melted
  • 1 tsp Lane’s BBQ Fiesta Rub
  • ½ tsp smoked paprika

For the Tacos:

  • 8-10 small corn or flour tortillas
  • 1 cup red cabbage, finely shredded
  • ½ cup fresh coriander, chopped
  • ½ red onion, thinly sliced
  • 1 jalapeño, sliced (optional)
  • ½ cup crumbled feta cheese
  • 1 lime, cut into wedges

For the Sauce:

  • ½ cup sour cream
  • 1 tbsp hot sauce (or to taste)
  • 1 tbsp lime juice
  • 1 tsp Lane’s BBQ Fiesta Rub – Available from Heat & Grill

Method:

1️: Marinate the Steak:

  • In a bowl, mix olive oil, lime juice, garlic, Worcestershire sauce, and Lane’s BBQ Fiesta Rub.
  • Coat the flank steak evenly, cover, and marinate for at least 1 hour (overnight is best).

2️: Grill the Corn:

  • Preheat the grill to medium-high heat (200°C).
  • Brush the corn with melted butter and season with Lane’s BBQ Fiesta Rub and smoked paprika.
  • Grill for 10-12 minutes, turning occasionally until lightly charred.
  • Once cooled slightly, slice the kernels off the cob for taco topping.

3️: Grill the Steak:

  • Increase grill heat to high (220-250°C).
  • Grill the steak for 4-5 minutes per side for medium-rare, or longer for desired doneness.
  • Rest for 5-10 minutes, then slice against the grain for tenderness.

4️: Make the Sauce:

  • Mix sour cream, hot sauce, lime juice, and Lane’s BBQ Fiesta Rub until smooth.

5️: Assemble the Tacos:

  • Lightly char the tortillas on the grill for 30 seconds per side.
  • Load them up with sliced steak, red cabbage, grilled corn, coriander, red onion, jalapeño, and crumbled fetta cheese.
  • Drizzle with the creamy sauce and finish with a squeeze of fresh lime.

 Serve with an ice-cold beer or a spicy margarita for the ultimate feast!
