Spaghetti with Lemon, Basil and Parmesan

Serves: Four

300g spaghetti
sea salt and freshly cracked pepper
juice of 3 lemons
150ml extra virgin olive oil
150g freshly grated parmesan cheese
2 handfuls freshly picked basil

Plunge the spaghetti into boiling salted water and cook as per the
manufacturer’s instructions.

In a large mixing bowl beat the lemon juice and olive oil together with a
pinch of salt and some cracked pepper.

Stir in the parmesan until it melts into the mixture.

Taste for seasoning and adjust as necessary.

Once the spaghetti is cooked strain it out and add it to the bowl using
tongs to fold it through the cheese mixture.

Finally fold through the basil and serve right away with a little extra cracked pepper.
