A “critical” shortage of hospitality staff will see some customers fork out up to 20 per cent more for food and drink at some businesses.

Wes Lambert, CEO of Restaurant and Catering Australia, said businesses would be left with little choice but to cover costs.

“There is such a critical crisis of work force shortage in Australia, that many businesses are having to offer $40 to $50 an hour for positions that would normally cost $20 to $30,” he said.
