It’s the year of the rooster and Melburnians have again been celebrating the Chinese New Year festival.

This week’s edition of Your Town discovered more about the festivities, and exactly what it means.

Elizabeth Chong is the festival’s ambassador this year.

Her entrepreneurial father commercialised the manufacture of dim sims.

‘Dim sims are pretty close to my heart,’ she told Tom Elliott.

‘To suit the Australian palette, our Chinese cafes used to fashion it into a more heartier version.

‘He thought to commercialise them.’

Her brother was also inadvertently responsible for making the fried dim sim a fish and chip shop stable.
