Cooking lobster for Christmas?

With China’s ban on Australian rock lobster still in place, the crustaceans are much cheaper than they have been in previous years.

So 3AW Breakfast asked Matt Preston for his tips on how to cook lobster.

“I think simple is better,” the acclaimed food writer said.

“Don’t bury them under a mornay. Split them, barbecue them – delicious!”

Matt Preston says lobster steaks served in sticky rye bread is “really the way to eat it”.

“If you want o get a little bit fancy, get some chamomile flowers and … cook them in butter and then strain out the flowers and you’ve made chamomile butter of your lobster. That’s a really clever flavour and it goes really well.”
